Ingredients

  • 1 medium butternut squash, peeled, seeded, and cut into cubes
  • 2 tbsp olive oil
  • 2 tbsp Papa Jacks Smokin’ Hatch & Jalapeno Marinade
  • 1/2 tsp smoked paprika
  • 1/2 tsp garlic powder
  • 1/2 tsp salt
  • 1/4 tsp black pepper
  • 1/4 tsp cayenne pepper (optional, for extra heat)
  • 1/3 cup spicy barbecue sauce (your favorite or homemade)
  • Chopped fresh cilantro or parsley for garnish

Instructions

  1. Preheat Oven/Air Fryer:

    • For roasting: Preheat oven to 400°F (200°C) and line a baking sheet with parchment paper.
    • For air-frying: Preheat to 375°F (190°C).
  2. Season the Squash:

    • In a large bowl, toss butternut squash cubes with olive oil, Smokin’ Hatch & Jalapeno Marinade, smoked paprika, garlic powder, salt, black pepper, and cayenne pepper until well coated.
  3. Cook the Squash:

    • Roast: Spread squash evenly on a baking sheet and roast for 25-30 minutes, stirring halfway through.
    • Air-fry: Cook at 375°F for 15-18 minutes, shaking the basket halfway through.
    • Broil (Optional): For extra char, broil for 2-3 minutes at the end of roasting.
  4. Toss in Spicy Barbecue Sauce:

    • Transfer the hot squash to a clean bowl and immediately toss with the spicy barbecue sauce until evenly coated.
  5. Garnish & Serve:

    • Sprinkle with chopped cilantro or parsley and serve warm.
