Southwest Salmon with Tequila Lime Sauce

Ingredients:

  • 1/4 cup tequila
  • 1/4 cup lime juice
  • 2 Tbsp honey
  • 1 Tbsp chopped fresh cilantro
  • 1 Tbsp minced garlic
  • 1 tsp grated lime peel
  • 1/4 tsp salt
  • salmon fillets, skin on (6 oz each)
  • 1 Tbsp Old El Paso™ chicken taco seasoning mix (from 0.85-oz package)
  • 1 Tbsp vegetable oil
  • 4 Tbsp Papa Jacks Fin & Feather Marinade

     Directions:

    1. In a small saucepan, whisk together the tequila, lime juice, honey, garlic, cilantro, lime peel, and salt.
    2. Bring mixture to a low boil over medium heat.  Reduce heat to low and simmer for 10-15 minutes or until reduced by half.  Remove from heat and set aside to cool.
    3. Season salmon fillets with taco seasoning mix.
    4. Apply 2 Tbsp of Papa Jacks Fin & Feather to each fillet and spread evenly with hands or a pastry brush.
    5. In an 8-inch skillet, heat oil over medium heat. Add fillets to skillet, skin-side down.
    6. Cook 6 to 8 minutes or until skin is browned. Turn fillets; cook 2 to 4 minutes or until salmon flakes easily with fork.
    7. Remove salmon fillets from skillet and brush both sides of each fillet with the tequila lime sauce.
    8. Garnish with fresh lime and serve.
