Ingredients:
4 boneless, skinless chicken breasts or 4 thick-cut pork chops
4 Tbsp brown sugar
2 Tbsp Kosher salt
1/2 tsp cayenne pepper
2 Tbsp paprika
4 Tbsp Papa Jacks Steak & Chop Marinade
1 cup pineapple juice
1/2 cup melted butter
Instructions:
For the rub: In a small bowl, mix together the brown sugar, Kosher salt, cayenne pepper, and paprika to create the seasoning rub.
For the finishing sauce: Combine the pineapple juice, melted butter, and 1 teaspoon of the seasoning rub mixture in a small saucepan. Heat over medium heat until warm.
Rub the chicken generously with the rub on all sides.
Apply Papa Jacks Steak & Chop to the seasoned chicken breasts, ensuring they are evenly coated.
Preheat your grill to 350°F.
Grill the chicken for 10 minutes per side, or until the internal temperature reaches 165°F (74°C). During the last 5–10 minutes of cooking baste the chicken generously with the finishing sauce.
Remove it from the grill and place it on a serving platter. Drizzle the warm pineapple finishing sauce over the chicken breasts.
Allow the chicken to rest for a few minutes before serving.
