This recipe uses a mixture of freshly juiced habanero and bell peppers, turbinado sugar, and Papa Jacks Steak & Chop Marinade to create a sweet & fiery flavor infusion that flavors the chicken through and through. Ingredients:
- 4 boneless, skinless chicken thighs
- 2 habanero peppers
- 1 red bell pepper
- 1 green bell pepper
- 4 Tbsp Papa Jacks Steak & Chop Marinade
- 1 Tbsp turbinado sugar
- Salt and pepper to taste
- 1 fresh mango, peeled and pureed
- 2 Tbsp honey
Instructions:
- Preheat your grill to medium-high heat.
- Prepare the marinade by juicing the habanero pepper, red bell pepper, and green bell pepper. Remove the seeds and membranes before blending them together until smooth. Strain the juice to remove any solids.
- In a bowl, combine the freshly prepared pepper juice with Papa Jacks Steak & Chop Marinade and turbinado sugar. Stir well to create a uniform mixture.
- Season the chicken thighs with salt and pepper to taste.
- Place the chicken thighs in a shallow dish, and spoon approximately 1 tablespoon of the marinade over each thigh, using a pastry brush to ensure that the marinade is evenly distributed. Reserve the remaining marinade which will be used to baste the chicken while cooking.
- Prepare the finishing sauce by mixing the fresh mango puree with honey in a small bowl. Stir until well combined.
- Grill the chicken thighs on the preheated grill, turning occasionally and basting with the reserved marinade. Continue to cook until the internal temperature reaches 185°F (~5-10) minutes per side, depending on the thickness of the chicken thighs.
- Once cooked, transfer the grilled chicken to a serving platter and drizzle with the mango-honey finishing sauce.
- Let chicken rest for 5-10 minutes before serving. Garnish with fresh lime and pair with your favorite side dishes such as grilled vegetables, rice, or a fresh salad.
