Ingredients:
For the Marinade:
4 lbs mixed chicken pieces (thighs, drumsticks, breasts, wings)
1 cup Papa Jacks Fin & Feather Marinade
2 tbsp soy sauce (optional, for extra umami)
2 tsp black pepper
1 tsp smoked paprika
2 tsp garlic powder
For the Coating:
2 cups all-purpose flour
1 cup cornstarch (for extra crispiness)
2 tsp salt
2 tsp black pepper
2 tsp garlic powder
1 tsp cayenne pepper (optional for heat)
For Frying:
6 cups vegetable oil (peanut or canola oil works best)
Instructions:
1. Marinate the Chicken:
In a large bowl, combine chicken pieces with Papa Jacks Fin & Feather Marinade, soy sauce, black pepper, smoked paprika, and garlic powder.
Cover and refrigerate for at least 4 hours, preferably overnight, for deep flavor.
2. Prepare the Coating:
In a large bowl, whisk together the flour, cornstarch, salt, black pepper, garlic powder, and cayenne pepper.
Remove chicken from the marinade, letting excess drip off, then dredge each piece in the flour mixture. Press the coating onto the chicken to ensure crispiness.
3. Fry the Chicken:
Heat oil in a deep pot or Dutch oven to 350°F (175°C).
Fry in batches, depending on the size of the pieces:
Wings & drumsticks: 10-12 minutes
Thighs & breasts: 12-15 minutes
